I’ve got a confession about how I needed an easy pancake recipe for dummies. I’m not sure if it’s because I have Coeliac Disease, but anything to do with wheat flour is like watching me do the Elaine.
As a foodie, I like to make foods from scratch, but with gluten-free there are limitations. In order to create that chewy or crisp quality found with wheat flour, gluten-free baking products have to contain gum, starch and non-wheat flours, as well as sugar.
Therefore, when it came time to whip up pancakes at home I looked to Comensoli Pancake and Waffle Mix for help.
Luckily most baking goods, including pancakes, are supposed to have a little sweet. Also, sweet at breakfast is a perfect opportunity to pair it with something savory and salty, like seitan bacon. A vegetarian alternative, seitan might be found in your local organic store dairy aisle with the tofu and tempeh.
Mixing Easy Pancake Recipe
The instructions for the Comensoli mix were a no-brainer. Add one egg with a cup of milk and stir.
I didn’t want thick, dry pancakes, so I added another third cup of milk. Depending on your taste, adding the extra milk did not ruin the taste or texture.
Cooking Easy Pancake Recipe
I also used my light weight cast iron Komin pan. My intention was to elegantly swirl the batter in the pan to make something more crepe-like.
It still true that you have to lightly grease the griddle and wait for uniform bubbles to appear before removing. However, unlike an electric griddle, you can’t set your cast iron pan to 400 degrees. After several trials and a hungry kid, I opted for perfectly cooked imperfect pancrepes.
In the end, I had to give up my photographic vision of a beautiful crepe on a plate. However, it was helpful to have a six year old assistant. I simply rolled the pancrepes up with pretty berries and generous amounts of whipped cream and maple syrup. She thought they were the most beautiful things she’d ever seen.
The flavour was great and it had the chewy with a bit of crisp that you want on Sunday morning. Now the kid is after me to buy a waffle iron. For this look on her face every Sunday morning, it might be worth it.
